- 1 can Sockeye Salmon
- 1/2 celery stalk,chopped thin
- 1 green onion, chopped thin
- 1/4 cup ground oats & 2 tbsp walnuts
- 1 tbsp of mayo/avocado
- 2 cups spinach
Pulse oats in a food processor until crumbs forms along with walnuts.
Mix salmon, crumbs, celery, onion and mayo.
Form into 2 patties and store for 10 minutes in the fridge.
Heat on med-low in frying pan with olive oil for 6-8 minutes per side. Serve over 2 cups of spinach. Enjoy!
